- 1 tablespoon organic avocado oil
- 1 teaspoon garlic salt (or to taste)

Preheat your oven to 225°F.

Wash and dry the Roma tomatoes. Slice each tomato in half, then cut into strips before chopping into bite-sized pieces, about ½ inch each.

Place the tomatoes in a bowl and toss with the avocado oil, garlic salt, and black pepper until evenly coated.
4. Arrange.
Spread the tomatoes in a single layer in a glass baking dish or on a baking sheet. Try not to overcrowd them so the moisture can evaporate while they bake.
5. Bake low and slow.
Bake for 2½ to 4 hours, stirring once or twice during baking. (This will depend on how many you are making, but I find that around 3 hours is PERFECT for tomatoes that I am going to blend into a homemade pasta sauce!)
The tomatoes are finished when they are:
- Slightly wrinkled
- Deep red in color
- Tender with very little moisture remaining
- Not completely crispy
Because every oven is different, begin checking them around the 2½-hour mark, especially if your tomatoes are cut into smaller pieces.
